Arrival Canapés

  • Oysters Rockefeller – Baked with spinach, herbs, and a buttery breadcrumb crust.
  • Smoked Salmon Blinis – With lemon-infused crème fraîche and a "pearl" of caviar.
  • Waldorf Salad Tartlets – apple, toasted walnuts, and celery in a crisp pastry shell.
     

The "Forbidden Food" Feasting Table

  • The Raw Bar – Towering displays of chilled tiger prawns, dressed crab, and shucked oysters on crushed ice.
  • Prohibition Charcuterie – Cured meats "smuggled" in wooden crates, paired with artisanal cheeses, honeycomb, and "moonshine" soaked grapes.
  • "The Bootlegger" Beef Tartare – Hand-chopped prime beef with a dash of bourbon, served on a toasted marrow-fat sourdough crisp.
  • Gilded Fig & Gorgonzola – Fresh figs stuffed with creamy dolce gorgonzola, wrapped in salty prosciutto, and finished with a brush of edible gold.
  • Crab Louie – Fresh crab in a spicy, piquant dressing (a 1920s West Coast favourite)
  • Cured Salmon – Side of salmon cured with fennel, star anise, and a touch of gin.
  • Lobster Thermidor Bites – Miniature brioche rolls filled with creamy lobster thermidor and a hint of cognac.
